Making jam
Combine Jones Grown strawberries and greens with CT grown goat cheese for a local twist on this early summer salad.
For the Salad:
1 medium bowl of arugula or other mixed greens (spinach, buttercrunch lettuce)
1 pint strawberries, hulled and sliced
1 small package of local goat cheese
For Balsamic Vinaigrette:
½ cup olive oil
2 tbs balsamic vinegar
2 tsp mustard
Pinch of salt and ground black pepper
Whisk together ingredients for the balsamic vinaigrette (olive oil, vinegar, mustard, salt, and pepper), and pour over sliced strawberries.
Arrange the mixed greens in a bowl. Toss with the strawberries and balsamic vinaigrette just before serving, then top with dollops of goat cheese. To add variety, try mixing in fresh herbs with the greens. For a twist on the vinaigrette, substitute half of the balsamic vinegar for CT grown black currant juice.
